Keto Friendly Gummy Snacks

I love gummy bears!  Truth be told I love most any gummy treat.  My favorite drink at Applebee’s right now is the Blue Shark.  The spiced rum is amazing but the best part is it comes with a fabulous blue gummy shark!  Unfortunately, gummies are not the healthiest thing to be eating.

My son has been doing Keto for about 6 months now.  He has eliminated pretty much all sugar from his diet.  He has been doing so well staying on target that I wanted to find a sweet snack that I could make for him that wouldn’t throw him off track.  You can see where this is going right?

After pouring through numerous Keto cookbooks.  Ok it was only two 🙂 .  I found a recipe for yummy Raspberry Lemon Gummies!  This recipe is so easy, start to finish (meaning ready to eat) it only took about an hour.  This recipe combined two wins for me!!!!!

Ingredients:Keto Gummies

1 cup fresh raspberries (organic if possible)

1/2 cup lemon juice

1/2 cup water

1/4 cup unflavored gelatin (grass fed is preferable)

10 drops stevia extract

Blend raspberries, lemon juice and water in a blender until smooth.  Strain the mixture thru a fine mesh strainer to remove raspberry seeds.  I didn’t do this because raspberries are high in fiber and the fiber comes from the seeds.  Now this also means that your gummies will have a bit of a crunch to them.

Pour half of the raspberry lemon juice mixture into a small sauce pan and warm on medium high heat.  Pour the other half of the mixture into a small mixing bowl and slowly whisk in the gelatin.  Keep whisking until the gelatin is well blended and the mixture is thick.  Take your time with this step.  Take the warm half of the mixture and add it to the half with the gelatin.  Again whisking the mixture until it is smooth.

The recipe says to add 10 drops of stevia extract.  I tasted the mixture first and then just added stevia until I liked the sweetness and the tartness was mellowed.

Pour the mixture into silicone molds or into a 6 x 9 cake pan.  Place in the refrigerator until set.  This takes about 30 minutes.  Once your treats are set and chilled take them out and remove them from their molds.  If you used the baking dish the recipe suggested using cookie cutters to cut out fun shapes or you can cut cubes.  Whatever you may prefer.  I used molds that made dog bones and fire hydrant shapes as well as a mold that made little tiny hearts.  No matter what shape you decide to use make sure that your silicone mold has at least 24 cavities.

Store your gummies in an air tight container in the refrigerator.  IF you need to layer them place wax paper between the layers so that they don’t stick together.  Your Keto gummies will last about a week and a half when stored this way.

My family thought that these were very tasty and I liked that they were so easy.  This recipe used raspberries but you could easily substitute strawberries or blueberries depending on what you like.  On a fun note these tasty treats are also safe for your favorite pup!  So you can make up a batch for EVERYONE in your family, human or canine 🙂 .
